KNGT | Louisiana — Like many of us, we learned to cook in an old Cajun house probably from our moms or maw maws. I know for me I would watch my mom in the kitchen as she would turn what little food we had into a delicious meal. This got me thinking about Louisiana home cooking, and how there are things we cook without a recipe. Searching the Interweb I came across this recipe from the late great Justin Wilson which make me question, are you cooking Louisiana Gumbo the right way?

What do you need to make Louisiana Gumbo?

3⁄4 cup olive oil
1 1⁄2 cups flour
1 cup onion, chopped
1 teaspoon minced garlic
2 cups cut up andouille sausages
2 -3 lbs chicken, cut into small size parts, including gizzards
2 1⁄2 tablespoons Worcestershire sauce
1 1⁄2 teaspoons louisiana hot sauce
2 1⁄2 teaspoons salt
4 cups water
4 cups sauterne white wine

Lets talk about that last ingredient, White Wine, never in a million years would i think that adding wine to Gumbo would be a good idea. Have you tried it? I would love to know how it turned out.

I don't want to question Justin Wilson on this because lets face it, he was Cajun, when Cajun wasn't cool. Growing up in the 80s we only had a few TV channels and LPB was on of the only ones that we could catch good reception on. He was a staple at the house and we loved watching him.

So, the question at hand, are we cooking our gumbo the correct way? Or do we need to go down the the local liquor store for the "secret" ingredients.
